An egg a day keeps the doctor away?

According to Ann Louise Gittleman, author of the wildly-successful and truly effective, Fat Flush Plan: "A recent study found that dieters who ate two eggs a day for six weeks lost weight without exception, especially around the waist." She continues "Eggs are the single richest source of sulfur-bearing amino acids which play a vital role in the liver's ablity to produce bile, the substance that breaks down fat. In addition, eggs are high in protein, and protein has been found to raise the metabolism by 25 percent."

Something I've read elsewhere declares that eggs are full of Essential Fatty Acids, which are good for you in a million different ways. During my pregnancies, I used the Bradley Method which also recommended at least 2 eggs a day for the baby's sake.

I'm not a huge fan of eggs, but there are a few ways I can stand 'em. I'm boiling a dozen eggs right now to have as snacks throughout the week. Yesterday, I made devilled eggs to snack on, but they didn't last long. I also like them as cheesy ham omelettes. When I bake a ham, I chop up leftovers, freeze them on a plate, then toss them in a ziploc bag. This way, I can grab out just a handful to toss into an omelette and they aren't clumped together. Lastly, I like a good, runny poached egg sandwich.

Any other egg dish recommendations?

Mmmm. I love eggs. We're having a grittata for dinner tonight, on account of my treatment. Dinner must be easy.

I don't know what a grittata is; perhaps I'll try grits in a FRITATTA sometime and name it that. Sheesh.

Leo's fever isn't budging much, I think we're in for a late night between the tub and the bed.

LOL - I was actually pretty grossed out there for a second. I like grits by themselves, every once in a while, but that just didn't sound good. Believe it or not, I've never had a fritatta. I need to look up a recipe for that.

We eat eggs almost every morning for breakfast...cheap nutritious food for a large family with a grocery budget! Two pieces of french toast use nearly two eggs, too. I think.
